Spit Roast Main Course

I would suggest a selection of one or two menu items for the spit roast,

together with a selection of salads

Roast leg of lamb served with fresh mint sauce and redcurrant sauce

Moroccan za’tar crusted lamb

Marrakech lamb mechoui rubbed with cumin and paprika

Lamb marinated in Moroccan chermoula of garlic, parsley,

coriander, saffron, hot paprika and lemon

Provençal lamb marinated with lemon zest, rosemary garlic and olive oil

Lamb masala marinated in Indian herbs, spices and yoghurt

Sicilian lamb marinated in thyme, oregano, orange and olive tapanade

Asian style loin of pork marinated with star anise, cinnamon, ginger, chilli and sweet soy

Spanish al cerdo pork marinated with fennel seeds and garlic

Honey glazed gammon studded with cloves served with Cumberland sauce

Orange, ginger and maple glazed gammon

Chinese five spice and soy glazed gammon

Loin of pork served with crackling and apple sauce

Garlic, fennel and thyme rubbed pork loin served with cinnamon and apple membrillo sauce
